As promised.
THE ENCHILADAS POST.
(Dun dun dun DUN)
I tried finding pictures of all of them but no such luck. Oh well. I got all of these from google, though, so it's not my fault if they're ugly as sin.
Enchiladas

The basic, perfect enchilada. Basically, it's a tortilla dipped into red sauce and dipped into oil, with either pork or chicken rolled inside (pork is most traditional, though, and tastes muuuuch better). Served with lettuce, sour cream and really really hot sauce.
Enchiladas Tapatías
These are second because they're form my city. :3 even if I don't like them all that much. It's a basic enchilada, but it has cheese and onion on the inside.
Enchiladas Suizas

The 'Swiss' enchilada has nothing whatsoever to do with Switzerland. Go figure. These always make me think of Mexico city, but I've actually no idea where they come from - all I know is that they're everywhere. They have chicken inside, and while the tortilla is usually dipped into oil, it doesn't have any red sauce (or adobo). Instead, they're covered in green sauce and cheese and put in the oven until the cheese melts and the sauce boils.
Coincidently enough, my dearest mommy made these today. So, so good. ♥
Enchiladas Potosínas

Some of the most unknown enchiladas, but my dad's family comes from San Luis Potosí, so I've had them all my life. Ignore the plate in that picture, though, it's so godawful it hurts. But yes! They're small and sort of flat and have cheese inside - they're dipped into oil until they're crunchy, and then they're topped by fresh guacamole and sour cream and lots and lots of hot red sauce. These are the ones I had yesterday - we can only get them in here once in a while and frozen, but they're still such a treat.
Enchiladas Mineras

From Guanajuato, they're standard enchiladas with chicken inside - the difference is that they're topped with chopped carrots and potatoes that have been dipped into the same oil as the tortillas. They're usually accompanied by a chicken leg, or another piece, because apparently people in Guanajuato like to eat and eat well. I'm ambivalent about them, but my dad swears by them.
Enchiladas de Mole

From Puebla, these are chicken enchiladas topped with black mole - an incredibly complex sauce made with a bazillion different kind of chiles and spices and chocolate. They're pretty awesome, but I actually prefer Pipian, a diferent kind of mole (and more brownish in color).
Enchiladas dulces
From Colima, my mom's original state. They're filled with minced meat, peas, potatoes and another vegetables, all with a recipe something alike to the 'relleno' people serve at Christmas, you know? The thing they stuff the turkey with? Yeah, I don't get it either. There's sweet mole on top, so they're essentially bittersweet. They're pretty good, and my grandma adores them, but there's better and more interesting (and overlooked) cuisine in that state.
There's probably a bazillion other kinds of enchiladas, probably all wonderful, but these are all I know (and tried). So if you know a different kind of recipe, do tell me!
The best enchiladas I've ever had? Hard to say, especially with so many kinds. My favorite meat enchiladas, though, are from a retro-kitsch wonderful restaurant in my city called Doña Gabina Escolástica. They are just sublime. The worst enchiladas I've ever had? In San Antonio, in this pseudo-Mexican restauran that was actually attended by Mexicans, which was just undignified. But seriously, they were so bad - they had yellow cheese on top of them. I mean, yellow cheese, what the fuck. Ew.
And now I feel like doing a taco version of the post because while there are also a bazillion ways to eat tacos, none of them look like the crap that Taco Bell serves, ugh.
And now I officially have way too much time in my hands. *headdesk*

De lo que he probado de la comida argentina* todo me ha encantado (especialmente porque soy una carnivora de lo peor), pero tienen algun platillo raro que los extranjeros duden en comer? (sin contar la morcilla que sé que ustedes no le dicen morcilla pero se me olvida el nombre. La cosa echa de tripillas y no se que más. Um.)
*y pues mi buen padre que si ha estado por alla abajo dice que esta bastante parecido a la original, que mas bien es la brasileña que es difícil de encontrar

La comida argentina tiene mucho de italiana, la verdad, mas alla del dulce de leche (yumm), los alfajores y el asado (bueno, y el mate, que es un vicio nacional, pero creo que es mas justo admitir que tambien le pertenece a uruguayos y paraguayos, quizas mas que a nosotros incluso) - ¿platillo no apto para extranjeros? Hay una columna para The Guardian absolutamente delirante donde Alex Kapranos de Franz Ferdinand cuenta sobre sus aventuras en un restaurante tipico de Buenos Aires donde se le dio por comer criadillas (testiculos de toro, for the uninformed) que te lo dice todo, really...

Cuando leo Maitena me da mucha risa ver que todo mundo come ravioles todo el tiempo en sus historietas XD Hijos, alfajores, que rico. Pero el dulce de leche no es exclusivo - aquí le decimos cajeta, pero es lo mismo. Jaja, nada más de imaginarmelo tratando de comer criadillas me da risa XD Hace poquito vi en mtv un especial de cuando lilly allen estubo en méxico y la llevaron a comer hormigas e insectos y no se que otra asquerosidad. Y luego porque la gente se queda con mala idea de la cocina extranjera, eso ni la gente aquí lo come. o_O
Enchiladas Tapatías :)
And how to do that you ask? By listing the ingredients and preparation!
Sauce:
5 chiles pasilla, rinsing & seeding & cutting off stems
1/2 medium white onion chopped
2 cloves of garlic minced
4-5 large green tomatillos
1/4 cinnamon stick
1/4 tsp thyme
Salt and pepper to taste
Soak for 1/2 hr chile pasilla in 2 cups of cold water.
Fry chopped onion and and minced garlic in olive oil.
Put all ingredients in blender, add 1 cup of water and blend smooth.
Enchiladas
2 lbs or tortillas (the should be cold or room temperature. One or 2 day old work better, as they are dry and will not fall apart while frying.)
1/2 cup olive oil
1/2 cup corn or canola oil
(for the stuffing)
1 Crumbled queso fresco (farmer's cheese)
Shredded chicken (optional)
Chopped white onions
(for topping)
1 chopped cabbage or romaine lettuce
2 bunches of radishes, sliced thinly
1 cup grated Parmesan cheese
Mexican cream or fraiche cream
Heat olive and corn/canola oil together over medium-high heat in a large high skillet (there will be a lot of splatter)
Dip one tortilla at a time in sauce all the way and then put into oil
Fry one side and the the other. About 2 min each side.
Remove from oil and place on a plate
Repeat with about 4-5 tortillas
Stuff and roll fried tortillas with queso fresco, white onion and chicken (to taste)
Top with parmesan, cabbage/romaine, radishes and drizzle with some cream (I skip the cream myself, but for a lot a people it's amust)
Very VERY important: Eat immediately.

Hey, I'm sorely lacking in taco knowledge, beyond the basic asada, adobada, pastor and fish that are common over here. Norteño food. But I remember that they had a different look and feel in Guadalajara and Tlaquepaque.
Oh yeah, so hungry right now :/

POR FAVOR haz uno de tacos. Taco Bell esta bien para comer chatarra inventada (me gustan sus burritos con frijoles y queso, pero de vez en cuando). Cuando hay gente que en serio cree que Taco Bell es comida Mexicana, me pongo verde del coraje. Quiero saber quien invento los pinches tacos "hard shell" para romperle la jeta.

Supongo que algún día se dirá que se considera bien decir México, pero lo que pasa es que como todas las palabras que tenían la x han sido cambiadas, entonces se debería poder decir Quixote y esas cosas. Además habría que aprender que palabras se pronuncian con la j y cuales no.
Y demasiado mal llevo yo la ortografía de lengua como para que me lo vuelvan a cambiar.
Pero lo de traducir los nombres de las ciudades, en verdad es como los reyes, Grace Kelly es la Princesa Gracia, cosa que me llama mucho la atención porque siempre se la llamaba Grace cuando era actriz y en cuanto se convierte de la realeza pasa a ser Gracia.

Hijole, después de los tacos, el mole y el pozole, las enchiladas son mi comida favorita :D Y que buena entrada sobre ellas, ¿eh?.
Las que mi mamá hace son dos: las rojas, con chile guajillo y rellenas de frijoles refritos, las fríe un poco y después las hornea, y les pone encima crema, queso, aguacate, jitomate y cebolla. Y las verdes, esas las rellena de queso, las fríe hasta que se gratine un poco y les pone encima queso, crema, pollo, lechuga y cebolla.
Son de lo más rico del mundo, es más, ahora que llegue le voy a decir que mañana haga enchiladas para comer ;D
Pd. Yo apoyo la idea de los tacos, son mi comida favorita pero por mucho y yo sé que tienes mucho que decir sobre ellos :D
