I wonder how yellow cheddar became the supposed 'staple' of Mexican cuisine. It's especially weird because I find it near impossible to find it here - I like white cheddar, but the yellow kind sort of scares me. it's so --bright. No cheese should look like that. o_o

People should use more oaxaca cheese. Mmm, oaxaca cheese.

Orange (yellow) cheddar is Midwestern cheddar; white cheddar is New England cheddar. And since I'm a New England girl at heart, you know which one is found in my house. Which one is found in "Mexican" restuarants in the USA depends on region.

PS-The only difference between the two, food coloring. I read somewhere that they started adding the food coloring to Midwestern cheese to make it seem somehow richer and better than cheeses from other areas. In New England, on the other hand, they want their cheese to be the real deal.

Mmm, interesting. I didn't know it was just food coloring! I thought it was more age or something, or more processed (since it reminds me of the kind they use for cheeseburgers), and I really dislike aged cheeses, no matter how much of a delicacy it's supposed to be, so I stay away from it.

I'll never stop being amazed at all the flavors of cheese you can get out of the same ingredients. o_o

And great taste for liking the white one! XD

I Googled Oaxaca cheese, and it sounds very yummy. I'll have to get some the next time I'm at the store.

como dato curioso, en el nortiiii el uso del queso Oaxaca es casi nulo. Se usa màs el chihuahua. Por eso mi cara de confusiòn la primera vez acà en Michoacàn qe pedì en la tienda qeso para qesadillas y la señora me dio Oaxaca :o

A mi el chihuahua casi no me gusta, la verdad, ni el asadero. El que mas como es gouda, porque soy mal mexicana, jaja, aunque si lo compro hecho aqui (porque el holandes es caro. Y mas como apestosito.) Pero el oaxaca me encanta, me gusta desenrollarlo :D en Oaxaca probe unas cosas raras que se llaman tlayudas (como tortilla tostada con un aceitito raro con frijoles negros arriba) y venia con queso tambien oaxaca y estaba muuuy rico el queso. (lo demas, ahhh, no tanto.)
