It's actually kinda sad how the highlight of my day was going out for a facial. Urgh. I really have to get out of this house, but I know that my friends would probably invite my ex if we go out (that with the nasty thing about us hanging out with the same group of people, you see), and I really don't want to see him right now so I'm kinda ignoring the ENTIRE group. Er. And my high school friends (i.e. the ones that don't know him) are nowhere to be seen. My excuse is that in three weeks time school starts again and my schedule's so tight I'll barely have time to breathe, so. I kinda do miss school a bit. I don't miss waking up early in the morning, though.
I made (yet more) cupcakes today! I really don't know what's wrong with me, that with baking non-stop in the middle of SUMMER. But I digress. I'M TURNING INTO IZZIE STEVENS, PEOPLE, IT'S SCARY, because I bake the most while I'm feeling down/tired/moody/cranky/pissed. And then I feel aaaaaaall better after hours of mindless mixing and cleaning and dancing around in my kitchen. It truly is cathartic.
They were almond cupcakes with vanilla icing, and they turned out really well, they're all tasty, although, as always, they're not the prettiest things ever. But still, they're pretty cute because they're PINK. That alone made my day, lol.

In other news, I finally picked up the book I'd abandoned when Deathly Hallows came out, El Amor En Tiempos de Cólera (Love in the times of cholera) by Gabriel García Márquez, and after hours of reading about corny, cheesy vampires, it just made it painfully obvious how badly written Twilight is, lol. (I told my mom how I was reading this really BAD but really FUNNY book and she laughed lots and lots when I told her the highlights of the book XD I'm reading the trilogy anyway, because I could seriously use the laughs.)

Almond Cupcakes
1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1/2 cup milk
2 eggs
1/3 cup melted butter
1/2 teaspoon vanilla
1/2 cup finely chopped almonds
Stir flour, baking powder, salt and sugar together. Beat together the milk, eggs and melted butter; add to dry ingredients and beat 1 minute a low speed of electric mixer.
Add vanilla and chopped almonds; beat 1 more minute. Pour into greased muffin pans and bake at 350°F 20 to 25 minutes.
When cool, frost as desired and top with coarsely chopped almonds, toasted or plain.
Vanilla icing
2 cups confectioners' sugar, sift before measuring
1 1/2 tablespoons butter, soft
1/2 teaspoon vanilla extract
1/4 teaspoon salt
3 to 4 tablespoons milk
Combine all icing ingredients in small mixing bowl. Stir until smooth and well blended. Adjust for spreading consistency if necessary, adding more milk or more confectioners' sugar. Spread icing or drizzle on warm cookies or pound cake.
